sharing low cal holiday treats

Apple Cobbler

Just peel your apples (macintosh are good for baking, coat them with about a tablesoon of whole wheat flour and one table spoon of splenda. Add lots of cinnamon. Add about 3/4 cup of cranberries, chopped in the chopper (fine to use froen). Toss them together, add about two tablespoons of apple cider. Put in your pie pan and top with about 1/2 cup of grape nuts cereal. bake at 350 for abourt 45 minutes. This is delicious, really, you won't miss a thing.

Pumpkin Tarts:

Using either custard cups of cup cake wrappers. Spray custard cups with pam if using those.Put one ginger snap in the bottom of each cup or cup cake wrapper. Mix together one 15 oz. can of pumpkin, 1/2 c. egg substitute, 1 1/2- 2 tablespoons splenda brown sugar ( a little more is needed if using regular brown sugar), 1/2 salt, 1 tsp. cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon cloves (ground), 1/8 teaspoon nutmeg. Gradually blend in 1 6 oz. can of evaporated skim milk. Stir well. Spoon mixture over the ginger snaps in the cups. Fill 1/2 way- makes 8. Bake for 15 minutes at 425 degrees, then reduced to 350 for an additional 20-30 minutes, until it is firm and tooth pick comes out clean. Chill and serve topped with fat free coolwhip.
